Chicken Spinach & Mushroom Low-Carb Oven Dish 🍗🍄🥬
A creamy, high-protein bake with simple ingredients.
Ingredients:
• 2 cups cooked chicken, shredded or diced
• 1 1/2 cups mushrooms, sliced
• 1 cup fresh spinach, chopped
• 1/2 cup cottage cheese
• 1/2 cup cream cheese, softened
• 1 cup shredded mozzarella cheese
• 1/4 cup grated parmesan cheese
• 1/2 small onion, diced
• 2 cloves garlic, minced
• 1 tbsp olive oil
• 1/2 tsp Italian seasoning
• 1/4 tsp salt
• Black pepper to taste
Instructions:
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Heat olive oil in a skillet over medium heat. Cook mushrooms for 4–5 minutes until tender.
Add onion and cook until soft, then stir in garlic for 30 seconds.
Add spinach and cook until wilted. Remove from heat.
In a bowl, mix cottage cheese, cream cheese, half of the mozzarella, parmesan, and seasonings until creamy.
Stir in chicken and the cooked vegetable mixture.
Transfer to the baking dish and spread evenly.
Top with remaining mozzarella cheese.
Bake for 25–30 minutes until hot and bubbly.
Let rest a few minutes before serving.
