Here is a simple recipe for preparing apple and oat pancakes :
Ingredients:

1 cup instant oat
1 apple, peeled and grated
2 egg whites
1/2 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon vanilla
A pinch of salt
Coconut oil (or other vegetable oil) to grease the pan

Instructions:

In a large bowl, mix together the instant oats, the grated apple, the two egg whites, the cinnamon, the baking powder, the vanilla and a pinch of salt. Mix well until you get a homogeneous dough.
Heat a non-stick pan over medium heat and lightly anoil it with a little coconut oil.
Pour about 1/4 cup of dough into the pan to form each pancake. Cook for about 2-3 minutes on each side, or until the pancakes are golden brown and cooked through.
Once cooked, serve the hot pancakes with your choice of healthy toppings, such as Greek yogurt, honey, fresh fruit or a splash of additional cinnamon.
